So when do you apply patches?

From the mailbox today I got this question... I'm in the process of upgrading our SBS 2003 server to SBS 2008. It would be very helpful to me, and lots of others I'm sure, if we had guidance about applying updates, patches and rollups to a newly installed SBS 2008 machine. Should we apply Windows Server 2008 SP 2 first? Or do one or more rollups first and then SP2? Also, what about Exchange SP's, updates and rollups?
